Platelet aggregation before and after consuming vegatables in various food structures. there will be two treatments (liquid form of vegetable (approximately 250mL) and solid form (approximately 100g)of vegetable). Meal (breakfast) consumed once only over a period of approximately 20 minutes. The wash-out period will be 48 hours.

Effect of food structure on platelet aggregation and thereby to maintain healthy blood flow. Platelet aggreagtion will be measured by an aggregometer.

Summary
Brief summary
Inclusion of fruit and vegetables as part of our daily diet is a general requirement to keep the body healthy. However, recent studies show that certain fruit and vegetables possess specific health compounds (independent of their antioxidant properties) that not only help maintain a healthy gut but once absorbed may (i) maintain healthy blood flow, which may reduce the susceptibility to formation of blood clots and facilitate tissue maintenance, creating an general improvement in health and well-being.

As the first part of our study, we aim to establish ex vivo functional assays, which will then be applied in a large scale feeding trial to evaluate the effect of vegetable-derived compounds on platelet aggregation. to explore how the consumption of selective vegetable-structured foods may enhance cardiovascular health.
